Watch and see what the locals do, but my advice is to keep pruning to an absolute minimum, they don't like it and may sulk and not produce fruit if you take too much off. Stick to taking off all the dead branches and trying to keep the tree as open as you can to avoid any problems with insects/fungus.
You can take bits off at any time, but try to do most of it in Jan/Feb, before you get the blossom for the next years fruiting.
If your not meant to have midnight snacks, why do they put a light in fridges?
